Opi D’Aqui - Philippe Formentin

Philippe worked for almost 10 years as an apprentice to winemaker Alain Chabanon in Languedoc. After his winemaker classes, he decided to make wines abroad to learn different methods and how to work in different winemaking environments. He even made wine in Russia. When we talk about it he laughs and says that the wine he was creating there (it was a huge project with a lot of investors) was not exactly what he would usually drink. 

When he returned to France in 2011 he met Alain Coumont who helped Philippe build a cellar and basically helped start Opi d’Aqui. At the moment they vinify about 9 hectares of vines ( the same parcel every year) which are all certified organic and managed by a friend. Philippe also owns 0.5 hectares of Cinsault vines. Philippe is an unstoppable and very energetic person, so it’s no surprise his wines are too. He likes his wine to be fresh, with the most acidity possible and the most maturity of the grape.
